A waffle weave holds less water than terry and has far more surface area exposed to the air, so it dries in a couple of hours rather than most of a day. In a bathroom without a window that is the difference between a fresh towel and a damp one.
It feels thinner than a plush towel because it is. It absorbs about the same.
